Kentucky Derby Pie

No, this is not a Kentucky Derby Pie!  It’s an awesome Hamburger Cake that Mom made for my 12th birthday, complete with fondant tomatoes & lettuce with sesame seeds on top!

For my sophomore blog effort, I thought I’d go with something sweet. Mom could make anything she put her mind to, as evidenced by the hamburger birthday cake above. She once made a cake shaped like a tied lunch sack for one of Dad’s birthdays. (It was remarkable! The outer layer had some give to it, it was cinched with string in the middle and the inside was filled with some sort of mousse. There’s a photo of it somewhere that I’ll have to dig up.) When our house was on the Historic Society Holiday House Tour (OMG, the House Tour took over our lives! I had to keep my room clean for 2 WHOLE WEEKS!), Mom made an elaborate gingerbread house complete with ice cream cone turrets and a crushed blue sugar candy moat.

My offering to you today is much more simple, something the average joe with a sweet tooth can handle. It’s called Kentucky Derby Pie and was one of mom’s quick, go-to desserts. It’s gooey and sweet and has bourbon in it. What more could you want?!

KENTUCKY DERBY PIE

Unbaked 9” pie shell (I’m cool with store bought but if you want to make your own, then good for you!)
2 eggs
½ cup brown sugar
½ cup flour
2 Tbsp. Bourbon
1 (6 oz.) package chocolate bits, melted with ½ cup butter
1 cup chopped pecans
whipped cream or ice cream

Beat eggs, add sugar and flour, beat till smooth.

Add butter and choc, stir till smooth, then add pecans.

Bake at 350, begin checking it at 25 minutes—it’s best gooey, like brownies.
